Savor the Spicy Bite of Cauliflower Wings | Taste

One of my favorite poems is Invictus by William Ernest Henley. I invoked the last line: “I am the master of my destiny, I am the captain of my soul”, when I needed more will in the face of temptation.

I remember a specific occasion nine years ago. I had started to switch to a plant-based diet and was very successful. About four weeks into the process, I was faced with perhaps the most difficult food test to date. I suggested to my son and his colleagues that they buy buffalo wings at our favorite wing restaurant in town.

The moment I walked into the restaurant my nose sent a signal to my brain and my mouth started to get mouth watering – as it is now, come to think of it. It wouldn’t be easy.

I knew if I opened one of these containers, I was screwed. Unfortunately I had to wait an excruciating 15 minutes in the car until my son came to pick them up. It seemed like the longest 15 minutes of my life. I recited this poem several times during my wait and I triumphed by resisting the temptation.

Over the next few years, I learned other ways to achieve similar and truly satisfying tastes that matched my herbal lifestyle. Vegan macaroni and cheese, chicken-free chicken salad and, yes, even cauliflower buffalo wings can taste surprisingly similar to their meaty / cheesy counterparts using a little ingenuity and basic cooking skills. , not to mention the wealth of products now on the market to make this transition even easier.

It’s always fun to see die-hard carnivores devouring my herbal dishes, going back seconds and even asking for the recipe. They are usually surprised when they see that there was no meat or cheese on the ingredient list. Many times they’ve said they could never eat a plant-based diet, but you’d be surprised what you can do when you make it a priority.

I’m not suggesting that everyone should turn to plants, but anytime we can introduce more vegetables into our diet, the better. Even a few changes here or there can make a big difference and if these dishes are delicious, well, even better.

Buffalo Cauliflower Wings won’t make anyone believe they are eating chicken wings, but the tender cauliflower with its crispy crust and so familiar Buffalo sauce flavor will certainly have them coming back for more.

These can be served at your next soccer gathering, Halloween party, or even as a tasty side dish. Don’t forget the celery sticks and your favorite ranch or blue cheese dressing to really sell the experience.

We all have our personal nutritional challenges to overcome – some of us more than others. The next time you are faced with a temptation that demands all of your gut strength, tell yourself, “I am the master of my destiny, I am the captain of my soul.

Even if it doesn’t work, you recited poetry.
