Healthy eating: Ankita Konwar shows how to make khichdi with leftover vegetables

Nutritionists and doctors say there is no substitute for khichdi because it is the only meal that can solve your many health issues while gradually putting you on the road to recovery.

It is even said that the humble khichdi is a safe bet for people recovering from Covid, or those who have just vaccinated and feel under the weather.

With that in mind, if you are planning on making khichdi today, here is a simple recipe from fitness promoter Ankita Konwar that is sure to satiate your taste buds and feel full for a long time.

“If cooking is not your game, it could really help you 😜 Khichadi is the simplest, healthiest and most balanced meal of all! Also, if you have any leftover veg, this is the best way to go! Have fun 😊 ”, she wrote in the caption, alongside a video detailing the process.

* She takes chopped vegetables first, then washes and mixes the dal and rice.

* Then she adds mustard seeds and asafoetida to the oil heated in a saucepan.

* To this, she adds chopped garlic, chili peppers, minced onions, turmeric and chili powder, chopped tomatoes and salt.

* After that, she mixes the dal and the rice with it, and adds the previously chopped vegetables.

* She tosses them around and even adds cashews and a little jaggery.

* Remember to add water for consistency.

* She stirs it again and lets it cook, covering it with a lid.

* After a while, she removes the lid and mixes the ingredients one last time.
